Marinated Portobello Mushrooms












I have a new favorite food!

My husband's boss cooked for us a few months ago, and he made the BEST marinated portobellos. And it is SO EASY.

INGREDIENTS
2 portobello mushroom caps, cut into 1/2 inch pieces
1/4 cup balsamic vinegar
1/4 cup Lawry's Baja Chipotle marinade

DIRECTIONS
In a nonporous glass dish or bowl, combine the vinegar and marinade. Add the mushrooms and stir to coat. Cover, and refrigerate for at least 30 minutes.
Preheat grill for high heat.
Brush grate with oil, and arrange marinated mushrooms on hot grill. Turn after 2 to 3 minutes, and continue grilling until mushrooms are heated through and look wilted and black. Serve hot off the grill.





I've also done this recipe leaving the caps whole. Sometimes when we don't feel like grilling, we'll cook them under a broiler. They're great either way. My mouth is watering just thinking about them! There wasn't a single bite left after dinner last night.

Yummy! I am going to try this. I love portabellas. I usually make cap burgers, but these will give me another great way to enjoy them.

sylvana, I bet these would make great burgers. Actually, I might make them as burgers this week and see how they turn out. I bought four caps at the grocery store last week so there are two others I need to do something with.

Ambridge Pa is a town.. named after a mill....and the rose took me by surprise when I heard of it...

where did you get yours?

Welcome to my blog, Kath! I got my Ambridge Rose from the David Austin Roses online store. English roses are a special variety because they have the beauty of old garden roses but are generally more fragrant and flower repeatedly throughout the season. Some varieties are also more disease resistant than old garden or modern roses.

You should totally get one! With the Ambridge connection it would be too cute. Plus, this is a lovely rose with a fragrance to die for!
